Sakay (Chili Condiment) Recipe - Cuisine of Madagascar

Ingredients: 5 red (hot) or green (medium) seeded chilis, 4 large cloves garlic, 1 T grated ginger, optional: 1 T piri-piri peppers (hot), 1 1/2 t salt, 1 t oil, 1 T vinegar. Blend all ingredients to form a smooth paste. Serve as a condiment.

Ingredients (makes about 16 fritters): 2 C flour, 1 1/2 t salt, 1 t mild curry powder, 1 t baking powder, 3/4 t pepper, 1 1/2 C water, 1/2 C chopped watercress, 2-3 minced chilis, 2 minced large green onions, 1 minced tomato. Mix all ingredients to form a smooth batter. Pour oil 1" deep in a medium saucepan over medium heat, then once oil is hot, reduce heat to slightly warmer than medium low. Using two table spoons, scoop up batter in one spoon and use the other to push the batter into the oil, dragging it lengthwise to create an elongated form. Allow to fry, turning occasionally, until both sides are golden brown. Remove from oil and drain on a paper towel. Serve hot.
